Advanced 6-course classes for Anyone
Introduction

This 6-Day course of 3 dishes each was planned at the request of some who had attended the Basic classes and wanted to learn more. They would also be most suitable for those who already know how to cook and would like to learn more Peranakan dishes and make rempahs from scratch. The dishes are flexible and can change to suit some wishes.

The cost is $720 for the 6 classes or $140/ for an individual class. An ample serving of each dish will be given away after the class.

Day 1

1) Hong Kong Rose Flavoured Chicken with Wanton Mee...do your own "1 Michelin Star" chicken and pair it with wanton mee!
2) Wanton Soup...easy and nice soup to go with the chicken
3) Poh Piah...have your own poh piah party once you learn how to cook this healthy, popular dish

Day 2

1) Nonya Laksa...rice noodle in fragrant, coconut based gravy, rich and spicy. Learn to make this from scratch using my family recipe, well loved and tested for over 30 years. A sure winner!
2) Crispy Roast Pork...an undisputable favourite easily achieved with just 2 ingredients and minimum fuss. Unbelievable crackling guaranteed!
3) Fried Tang Hoon..a dish not easily achievable on your own. Learn how to do it without it resulting in lumps, but a delight to enjoy with sambal belacan.

Day 3

1) Ayam/Spare Ribs Buahkeluak..even if you do not know how to enjoy this nut, you will love the gravy drizzled over steaming plain rice. For those who love Buahkeluak, you will enjoy digging out the unadulterated, earthy, unique kernel to mix with your rice. Learn to cook this with my special rempah from scratch.
2) Bakwan Kepiting Soup...always a winner, a Peranakan Soup of minced pork with crab meat and bamboo shoot
3) Teochew Braised Duck...only the Teochews know how to do this dish to perfection. See how I do it and let your family enjoy!

Day 4

1) Chicken rendang....I've often been asked, after teaching Beef Rendang, whether the same recipe can be used for Chicken Rendang. Though some ingredients are the same, there are some differences
2) Kerabu Prawns/Chicken...a dish of my Mother-in-law from Penang, this tangy, spicy and totally appetising starter is easy to accomplish and can be a spin-off for many other dishes
3) Prawns in Salted Egg Yolk...full of flavour and crispy

Day 5

1) Yellow Ginger Roast Chicken...seasoned in tumeric and other spices, this oven roasted chicken is healthy and flavourful
2) Fish Belanda...another Penang recipe of threadfin fish which the children would like
3) Kiam Chye Duck Soup...cooked with salted mustard green, tomatoes and a dash of brandy

Day 6

1) Her Peoh Soup...a Fish maw soup popular with familiy meals at Chinese New Year, this dish is usually a family favourite. A big pot is cooked and can be served for several days for friends and family during CNY
2) Hae Choh...a Teochew favourite prawn and meat roll, deep fried till crispy and crunchy
3) Chilli Crab...Singapore's signature dish well known all over the world. Learn to cook this and serve it with Mantou, a chinese bun, deep fried or steamed, irristible with the chilli gravy!

 

Fees

• Beginners/Domestic Helpers (Maids) Course - The 5-day course costs $700. All ingredients are provided and the course includes take-home portions of dishes taught for employers’ sampling. It also includes a copy of my Cook Book 2, "Grandmothers Recipes, Everyday Dishes for Today's Families".

*Advanced Class- The 6-day course costs $850. Especially for employers who want their helpers to learn more after the Beginners' classes and anyone who is interested, who need not do the full course but only the ones they want, at $160 each Class

One Dish Meals - This 6-day course costs $850 or $150 per class. For anyone who wants a simple fast one-dish meal, this course will ensure that you will learn 18 dishes that you will enjoy. Quick and easy, with few ingredients, yet delicious!

Desserts Only!...popular Peranakan/teochew Desserts to make yourself...yummy yet not cloyingly sweet. This course of 5 classes with 15 dishes cost $580 or $130 per class. For anyone with a sweet tooth!

• Others - request for any 3 dishes from the list that follows, costs $130 -$150. Form your own group of 4 or 5 to start a class

Timing of Classes

• 10.30am to 12.30pm / 2.00pm to 4.30pm / 7.00pm to 9.30pm

Classes are conducted when there are at least 3-5 interested.

Note

Classes are hands-on where possible and demo from scratch and will start with a minimum of 3 . All ingredients are provided. The cost is $130/to $150/ per class.  A deposit of 25% or $20 is needed to confirm your place.

Classes will only commence if 3 or more sign up. You are welcome to make up your own group and request for your desired dishes which will be accommodated as much as possible. For one-on-one classes, please call me to discuss.
